The story
Glam Enrico Bartolini occupies a discreet corner of Venice inside Palazzo Venart, a luxury hotel along the Grand Canal in the San Stae district. Crossing the threshold, guests enter a secluded courtyard shaded by magnolia trees, where the restaurant’s intimate dining room seats up to thirty. A garden terrace overlooks the canal – unique in the city – with views of Ca’ Vendramin Calergi, the historic casino. The atmosphere is sober and refined, evoking a quieter, older Venice.
Resident Chef Donato Ascani describes his cooking as instinctive, born each morning at the market. He builds deep relationships with fishermen and farmers, who become both suppliers and first clients. “Every ingredient I choose speaks of the place, the moment, the beauty of the lagoon and its incredible variety,” he says. His creativity draws from memories of his mother’s dishes, conversations with fishermen, and traditional Venetian recipes passed down by elders.
The kitchen’s expression is rooted in Venetian gastronomic tradition, revisited in a modern key while offering contemporary alternatives that highlight the extraordinary flavours of the lagoon. The menu changes daily based on what the market provides – a reflection of the city’s exceptional larder of vegetables, seafood, and lagoon produce. The wine list is equally thoughtful, curated to complement the seasonal, instinctive dishes.
Glam Enrico Bartolini holds two Michelin stars, a testament to the precision and soul of Chef Ascani’s cooking. The award is woven into the restaurant’s fabric, not displayed as a trophy but as a natural outcome of daily dedication to ingredient, place, and tradition.
