The story
In Vercelli, two brothers who are also chefs run a restaurant that feels both ambitious and grounded. Christian and Manuel describe their work as a constant impulse toward something more—a dialogue between tradition and the future, rooted in the landscape around them. The restaurant is housed within the family-run Hotel Cinzia, a property that has been welcoming guests since 1967, when their grandparents Nino and Sandra first opened its doors. That sense of family and continuity runs through everything they do.
The brothers’ cooking is built on four pillars: emotion, territory, passion, and evolution. They describe their approach as a continuous search for quality, drawing inspiration from what lies just outside their window. Rice, the grain that defines the Po Valley, is the protagonist of many dishes—it has been and will always be their starting point. Manuel, described as the “sweet cook,” now leads the kitchen as head chef, and it is in the desserts that each tasting menu finds its celebration. Their modern cuisine is served through a series of tasting paths, designed to provoke emotion and showcase the best of the region’s produce.
This dedication to craft and place has earned Christian & Manuel a Michelin recommendation, a recognition of the brothers’ ability to transform ideas into plates and imagination into concrete experience. With a limited number of tables, the restaurant offers an intimate setting where guests can explore a menu that changes with the seasons. Whether you choose a three-course or seven-course path, the focus remains on quality, territory, and the quiet passion of a family that has been perfecting its art for generations.
