The story
Since 1998, L'Oste Scuro has brought the spirit of a Parisian fish brasserie to the heart of Verona. Conceived by chef Simone Lugoboni—who refined his craft alongside the legendary Angelo Paracucchi in Rome and Liguria—the restaurant has evolved into the city's premier address for wild-caught fish. Step through its doors, and you discover a small bay on the sea, where the focus is squarely on the quality of the ingredient.
The philosophy is simple and rigorous: center-stage is reserved for wild fish from Italian waters, alongside premium products like oysters, caviar, lobsters, and blue lobsters. The kitchen respects and exalts these ingredients without unnecessary fuss. The dining room, staffed by a young and smiling team, is dedicated to creating a relaxed and pleasant experience.
A tasting menu offers a choice between raw and cooked starters, showcasing the kitchen's range. Raw options might include mantis shrimp with tarragon and basil, or a snapper tartare with mint emulsion. Cooked starters feature Sardinian octopus with eggplant cream, or creamed cod with pil-pil sauce. The meal continues with pasta, like Matt durum wheat spaghetti with sea urchins and burrata, and main courses such as miso-marinated black cod with Siberian caviar.
