The story
Just outside Vicenza, in the quiet hamlet of Caldogno, Trattoria Molin Vecio occupies a building that has stood since 1520 – a former water mill. The wheel still turns, driven by the clear waters of the Risorgive springs, and the rhythm of the place is deliberately slow. Inside, the dining rooms are intimate, with fireplaces and stoves; in summer, tables spill onto the shore of a small lake, where guests dine under gazebos.
The true heart of the kitchen here is the land. The restaurant tends a "Brolo" – a traditional orchard planted with forgotten fruit varieties – and an "Orto Officinale" that holds over one hundred types of herbs and edible plants. These are not decorative; they are the source of the kitchen’s daily inspiration. The team works with the seasons, selecting local ingredients that are at their peak, and the menu changes accordingly. This is Venetian cooking at its most grounded, where the flavours come from the earth and the water that surrounds the mill.
The approach at Molin Vecio is described by the team as a “filosofia di vita” – a way of life that values substance over appearance, and pauses over haste. This quiet, thoughtful cooking has earned the restaurant a Bib Gourmand from Michelin for 2026, a recognition of good quality, good value cuisine. The restaurant also hosts a calendar of events throughout the year, including a celebration of its own herbs and a dinner dedicated to forgotten fruits, all of which reflect the same principle: honouring what grows, and what is local.
