At the Gasthofstube Stafler in Vipiteno (Sterzing), chef Peter Girtler brings together two worlds on one plate. His cooking draws on old Tyrolean recipes, the freshness of the South Tyrolean mountains, and Mediterranean secrets — a philosophy the restaurant calls “Mare e Monti” (Sea and Mountains). The result is refined, regional Austrian cuisine with a distinctive touch, served à la carte in a setting that feels both historic and welcoming.
This approach has earned the Gasthofstube a place in the Michelin guide, where it is currently listed as Recommended — a recognition that speaks to the kitchen’s consistent quality and the dining experience’s overall appeal.
The Gasthofstube is part of the Romantik Hotel Stafler, and its dining rooms reflect centuries of use. The Hans Stafler stube is a spacious, wood-paneled room with cozy alcoves, ideal for a quiet evening. The main vaulted hall is the heart of the restaurant: its medieval ceiling, painted windows, and wall decorations from the early Renaissance transform what was once a carriage stop into a dining room of rare character.
In warmer months, guests can eat in the romantic garden, surrounded by rose bushes and centuries-old trees. Lunch, coffee, gelato, and evening aperitifs are served there by candlelight.
