Every meal begins with staff harvesting fully matured produce directly from the resort grounds. This farm-driven cooking strips away heavy garnishes so the raw vitality of roots reaches the table unadorned. More than twenty five colleagues rotate between the fields and the pass, learning how compost quality shifts taste across seasons. That shared labor translates into plates that highlight precise texture over theatrical presentation.
The space wraps around indoor foliage arranged to echo ancient forest shrines. Tibetan guests often recognize the word JIMGU as a place to return home, which shapes the quiet pacing of the evening. Dinners start inside a climate controlled greenhouse where servers explain the morning’s harvest before guests move to the main tables.
