The chef and his trajectory

At KOGISHI in Fukuoka, French cuisine takes its cue from two decades of rigorous international training. Owner chef Akihiro Kogishi built his foundation at institutions like Alain Ducasse au Plaza Athénée, Pierre Gagnaire, and Michel Bras across Europe and North America. His career path returned him to Japan, where he helped launch Pierre Gagnaire Tokyo and later managed kitchens that secured a Michelin star. He opened this independent venture in 2023, carrying forward a discipline forged in high-pressure European kitchens.

Seasonal composition and plating

The kitchen treats each plate as a canvas, arranging local produce according to natural proportions. Menus rotate bi-monthly to highlight the Kyushu harvest across eight or ten carefully paced courses. Guests selecting the higher dinner tiers will often find preparations featuring blue lobster. This disciplined approach explains the restaurant holding a consistent 15.5-point rating in Gault&Millau since 2024.

Fourteen individual tables anchor the main floor, while a separate private room accommodates up to six guests.
