The story

Gojo GENBEI: Michelin-Recommended Vegetable Kaiseki in Gojō, Japan

A Vegetable-Centric Kaiseki in a 250-Year-Old Merchant House

In the Yamato region of Nara, Gojō is a town cradled by Mount Kongō and the Yoshino mountains, where clean water and misty mornings nurture robust vegetables. Gojo GENBEI sits in a 250-year-old merchant house on Gojō Shinmachi, a street lined with Edo- and Meiji-era buildings. Here, the focus is on the vegetables of the region—roots, greens, and herbs that change with the seasons. The Japanese cuisine served is a course meal that lets these vegetables take the lead, paired with local delicacies such as sweetfish and Yamato beef when the season allows.

The Chef’s Morning Ritual: Letting the Vegetables Decide

The chef-owner starts each day in the fields. “The morning fields are a treasure mountain,” he writes. He consults the freshly picked vegetables—their aroma, sweetness, and bitterness—and crafts a menu that highlights their individual character. No two days are the same. This philosophy of gratitude and auspiciousness runs through every dish, from the first bite to the last. The restaurant’s intimate setting, with table seating and private rooms, offers a calm space to experience the rhythm of the land.

Winter Specialty: The Gojo Bird Hot Pot

When the cold sets in, a special dish appears: the tori nabe (bird hot pot). Unlike a standard chicken hot pot, this version uses all parts of the morning-fresh bird—thigh, heart, liver, gizzard, and more—simmered with generous amounts of Gojō vegetables. It is a hearty, communal dish that captures the essence of the region’s winter abundance.

A Michelin Recommended Address

Gojo GENBEI’s dedication to sourcing and seasonality has earned it a place in the Michelin Guide, where it is listed as a Recommended restaurant for 2026. The Michelin website’s magazine also featured the restaurant, highlighting its sustainable approach to ingredient selection. For those who wish to linger, the restaurant offers a lodging option in a traditional townhouse across the street, with a morning breakfast of tea porridge delivered to the room.
