A Line from Mountain to Sea

Deep in the Okuyoshino region of Nara, in the humble village of Tenkawa, SÉN offers a dining experience rooted in the landscape. Chef Toshiharu Sunayama calls his cooking “Cuisine du Bassin” – watershed cuisine. The idea is simple and profound: water trickles from Mt. Omine, forms the Kumano River, and flows to the sea. The food follows that same thread, connecting the mountain’s wild edibles with the ocean’s bounty.

The restaurant is set within the hall of ‘Seseragi no Yado Misenkan’, a traditional inn surrounded by maple trees and the sound of clear streams. It is a setting that invites stillness and attention.

Chef Toshiharu Sunayama

Born in London in 1987, Chef Sunayama trained in France, working as sous chef at the two-starred La Grenouillère and later at the three-starred Flocons de Sel in Megève. Returning to Japan, he opened Les Tonnelles in Kanazawa, where he became the youngest and fastest chef to earn two Michelin stars and a Green Star. In 2023, he moved to Tenkawa Village, opening a gelato shop before launching SÉN in 2025.

His path reflects a deliberate return to source – to cook where the river begins, using ingredients foraged, farmed, and fished from the watershed.

The Watershed Experience

The course, priced at ¥25,000 (including one drink), presents around ten dishes that change with the seasons. The kitchen draws on the village’s history: cedar carried downstream on rafts, dried fish and fermented sushi brought back from the coast, mountain vegetables foraged by ascetic pilgrims. Every plate is an expression of local production for local consumption, preserving the natural environment and food culture of Tenkawa.

This approach earned SÉN a Michelin one star in 2026, a recognition of cooking that is both deeply specific and quietly sustainable. It is a cuisine that asks you to taste the line between mountain and sea.
