The story
Maison Kei in Gotenba presents refined French cooking shaped by a partnership between chef Kōru Kobayashi and Toraya, a confectioner established during the Muromachi period. Their professional relationship traces back to 2010, when Toraya’s eighteenth headmaster visited France to study Kobayashi’s kitchen operations. After nearly a decade of collaborative development, the venue finally opened its doors in 2021. The project merges French culinary discipline with Japanese pastry traditions under one roof.
Kobayashi describes the daily offerings as earth cooking, drawing directly from the agricultural abundance surrounding Shizuoka. The kitchen moves freely outside standard culinary boundaries while maintaining a strict focus on ingredient purity. Seasonal produce receives precise temperature control and minimal seasoning to highlight natural sweetness. This method of French cuisine rewards diners who appreciate quiet precision over theatrical presentation.
The dining room operates with a clear emphasis on sustainable sourcing, a practice that secured the restaurant a spot in the recent We’re Smart Green Guide. Crystal water glasses come from Saint-Louis, a French manufacturer active since 1586, chosen for their acoustic clarity and thermal stability. Tables remain deliberately sparse to prevent visual competition with the plated courses. The overall pacing encourages unhurried attention to each seasonal progression.
