Villa Aida in Iwade has built a dedicated following around its vegetable-focused cuisine over twenty-eight years. Chef Kanji Kobayashi opened the original Ristorante AiDA decades ago and now guides this kitchen through a deliberate shift toward fully plant-based cooking. After studying vegetarian establishments across Europe and Asia, he removed meat and fish from the menu last July while keeping dairy and eggs on a gradual phase-out path. This transition reflects his core belief that standing still means declining, a principle that earned him the 2026 Gault&Millau Chef of the Year title alongside recognition from the We’re Smart Green Guide.

Seasonal Plates and Garden Preserves

The eight-course dinner begins with ingredients harvested from the surrounding Wakayama fields each morning. Cooks evaluate three hundred different vegetable varieties daily, pairing roots, leafy greens, and citrus to draw out distinct textures and flavors. Guests also encounter house-made preserves, salt-pickled olives, and bottled tomatoes that capture the harvest cycle. This dedication to seasonal cuisine transforms simple crops into structured courses where every element carries weight and intention.

The Hillside Dining Space

Large wooden tables anchor the dining room, which opens onto terraces overlooking Wakayama’s coastal hills. Staff maintain adjacent gardens where they cultivate herbs and fruit trees for daily service. Outdoor seating extends the footprint during warmer months, allowing guests to watch daylight shift across the valley.
