The story
Ichirin Hanare delivers refined Chinese cooking in Kamakura through the disciplined hand of executive chef Hirofumi Saito. He built his technical foundation during a twelve year tenure at Akasawa Sichuan Restaurant before joining the Wavez group in 2008. Saito took over the kitchen in 2016 and established this Kamakura location in 2017 as a quiet annex to his original Tsukiji venue. The Chinese kitchen’s steady execution recently secured a fifteen point Gault&Millau rating, rewarding years of consistent ingredient sourcing and temperature control.
The dining program follows a strict seasonal omakase format that shifts according to daily market arrivals. Lunch guests navigate tiered menus starting at 8,800 yen, while evening reservations begin at 17,600 yen. Both schedules incorporate a ten percent service charge and pair naturally with aged Shaoxing wine or carefully selected spirits. The Chinese culinary approach avoids heavy sauces in favor of clear broths and precise wok techniques.
Guests arrive after a fifteen minute walk from Kamakura Station, leaving vehicle storage to nearby municipal lots. The building maintains a low profile with irregular closing days that give the team time to prep broths and inspect deliveries. Patrons settle into a calm interior where conversation flows easily between courses. The layout prioritizes comfort over theatrical presentation, keeping attention firmly on the plated dishes.
