The story
In Kashihara, Nara, Nikutoieba Matsuda operates as a reservation-only wagyu kaiseki, built around a single, uncompromising ingredient: Yamato beef. This local Nara-brand wagyu is the star of a full-course menu that explores the depth and elegance of Japanese beef cookery. The restaurant's name – "When you think of meat, Matsuda" – signals its singular focus.
The chef, also a certified sommelier, brings a dual expertise to the table. Every course is designed to harmonize with wine and other beverages, offering pairings that elevate the rich, clean flavours of Yamato beef. The cooking is Japanese in spirit, balancing seasonal vegetables with carefully selected wagyu sourced from across Japan.
Meals unfold in a setting that is both refined and approachable. Guests can choose counter seating, where the preparation is part of the experience, or table service for a more private meal. The restaurant is open for dinner only, from 17:00 to 23:00, and closed Monday and Tuesday. Reservations are accepted exclusively through the Omakase platform.
The restaurant’s dedication to quality has been noted by the Michelin Guide, which awarded it a Recommended designation for 2026, following appearances in the Nara editions of 2022 and 2023. This recognition underscores the precision and care that define the kaiseki here.
