Chef Noriyuki Kinoshita completed his early training in Osaka before spending his twenties at four starred restaurants across Turin, Bergamo, Alba, and Vicenza. He opened the current location in May 2020 after managing kitchens and leading service teams back home. His philosophy remains straightforward, treating technology as a tool rather than a crutch when working with premium produce.

Precision Heat and Regional Ingredients

The kitchen draws directly from producers across Hyogo prefecture, receiving snow crabs, white squid, Awadai, and wild mountain vegetables daily. Okuda tomatoes from Awaji and Tajima venison appear alongside handcrafted dashi stocks that bridge traditional Japanese foundations with Italian flavor profiles. Kinoshita controls cooking temperatures to within 0.1 degree while applying Shikoku binchotan charcoal and custom sun-dried salt from Tanoya Enjiro. These methods strip away unnecessary elements so the natural character of each ingredient drives the final plate.
