Ingredients and Plate Composition

Deliveries arrive daily from Hosaka orchards, the slopes of Mount Tateshina, and regional fisheries. Yamada pairs these Yamanashi staples with carefully sourced European poultry and crustaceans, bridging the two terroirs through careful temperature control and reduction techniques. Freshwater fish and wild game rotate through the menu depending on what the rivers and forests provide that week. Guests experience these combinations across a curated progression rather than an à la carte selection.

Space and Cellar

The building sits quietly among working grapevines just outside Nirasaki. Inside, twenty main dining seats face large windows while fifteen terrace chairs catch the afternoon sun. Two separate private rooms offer enclosed seating for larger groups. The beverage program leans heavily into local Koshu varietals alongside a dedicated collection of classic French labels, ensuring each course finds a clear aromatic partner.
