The Chef and His Background

TOEDA in Karuizawa delivers precise French cooking rooted in classical European training. Tadataka Toeda launched the project after completing his apprenticeship across three Michelin starred kitchens in France. He trained under Jean Paul Jeunet, Georges Blanc, and Régis Marcon before returning to Japan to represent his country at the Bocuse d’Or. His disciplined approach guides every plate served at this compact venue.

The Kitchen and Menu

The lunch and dinner service follows a strict chef omakase format priced at fourteen thousand five hundred twenty yen. Guests receive a complete progression featuring seasonal produce sourced primarily from Shinshu and select regions across Japan. The kitchen applies traditional French techniques to highlight the natural qualities of each ingredient. This disciplined execution recently secured a 15.5 score from Gault Millau.

The Room and Wine Selection

The dining room contains only three tables to maintain an intimate pace for every reservation. Patrons sit near the kitchen while staff coordinate a curated selection of roughly one hundred wines. The list leans heavily toward French labels but includes several bottles from local Nagano vineyards. A dedicated pairing option matches each course without disrupting the flow of the meal.
