The story

PAUL in Motobu: Modern Okinawan Cuisine by Chef Paul Matsouka

The Chef and the Kitchen

At PAUL in Motobu, Chef Paul Matsouka approaches modern Okinawan cuisine as a discipline rooted in global technique. Born in Okayama and trained across Michelin-starred kitchens in France and Spain, he studied directly under Albert Adrià before refining his craft at Central in Peru. This European apprenticeship drives his current mission to dismantle the local myth that regional cuisine lacks quality ingredients. He treats the island instead as a concentrated archive of unique produce.

Seasonal Techniques and Course Structure

Every dinner service operates as a single omakase progression priced at ¥20,000 plus tax. The kitchen relies on a wood-fired grill to char delicate vegetables and finish proteins, leaving a faint smoky scent on guest clothing. Matsouka receives daily deliveries of highly individual crops from Yanbaru farmers, allowing him to construct plates around whatever arrives fresh that afternoon. Guests must navigate strict allergy protocols since cross-contamination remains possible.

Dining Room and Recognition

The compact interior divides evenly between eight counter stools and eight standard tables, creating a quiet space where guests observe the plating process. A mandatory single seating start time ensures smooth service, though late arrivals will receive a truncated menu. This focused pacing supports the establishment’s recent Gault&Millau rating of 15.5, reflecting the steady execution behind each dish. Smart casual attire replaces resort wear inside, underscoring the seriousness of this contemporary cuisine.
