Local seafood and island vegetables meet seasonal Kyoto harvests to create a modern Italian menu that changes with the market.

The dinner service follows a strict tasting format where every plate reflects the intersection of Mediterranean technique and Pacific ingredients. Morning guests choose from structured options like a herb egg omelet dressed with truffle sauce or smoked salmon layered with mushroom duxelles.
