A Focus on Rice and Fish

After more than a decade of training at a renowned Japanese restaurant, the chef of GOKAN UOGIN opened this intimate counter restaurant in Nara with a clear vision: to let the quality of rice and seasonal fish take center stage. The result is a refined Japanese dining experience that earned a Michelin one star in 2026—and continues to draw guests for its quiet, exacting craft.

The Rice, Cooked One Batch at a Time

The heart of every course is the rice. GOKAN UOGIN uses Hinohikari rice from Nara, stored as brown rice and polished just before cooking to preserve freshness and moisture. Each portion is cooked individually in a custom-made earthenware okudosan (kamado), yielding glossy, plump grains with a sweet, rich flavour. The chef presents the finished rice in bowls he personally crafted, underscoring the care poured into every detail.

A Seasonal Course Menu

The menu changes monthly, built around the best seafood from the morning market and directly from fishermen across Japan, paired with local Yamato beef and Yama vegetables from Nara. A typical evening course includes seven to eight dishes, from appetizers to grilled items, leading up to the climax of that freshly cooked rice. The counter seating lets guests watch the cooking process—heat, steam, and aroma—creating a live, immersive atmosphere. Guests are invited to forget the everyday and enjoy food and sake in a relaxed, sophisticated space.

Warm Wood and Ceramic Vessels

The dining room features a solid single-plate counter that radiates warmth, while the tableware comes from celebrated ceramic artists. With just eight counter seats and two table seats, the setting encourages quiet, unhurried enjoyment of the meal and the selection of local sake that complements each dish. Private parties are also possible.

GOKAN UOGIN offers a genuine taste of Nara’s seasonal bounty, in a space where every element—from the rice cooker to the chopsticks—has been chosen with intention.
