The story
A short walk from JR Nara Station, LA TRACE brings French cooking into close conversation with the land around it. Chef Ryo Sato, who trained in Burgundy at restaurants like L'Esperance and Le Charlemagne before returning to Japan, opened the restaurant in 2016 with a clear conviction: to use only ingredients whose producers he knows personally.
That principle shapes everything here. Sato visits farms and fisheries himself, building relationships that go back years. The vegetables come from Hirahira Farm, a partner since the beginning, which grows around 100 varieties of organic produce each year and refuses to ship anything it isn't satisfied with. The chicken is Yamato Nikkei from Miyabi Chick Farm in Nara, raised free-range on specially adjusted feed. The result is a consommé so clear and flavourful that the restaurant considers it irreplaceable.
Every course responds to the day's catch, the season's shift, even the humidity in the air. Sato adjusts the moment he seasons, the timing of the heat, the pace of service. The menu changes monthly and is served as an omakase course for both lunch and dinner.
The drinks are chosen with the same care. Chef Sato's wife, Wakana Sato, studied sommelier training in Nantes and selects pairings that may include wine, sake, or tea-based cocktails. Each is tasted repeatedly against the dish it accompanies. A summer pairing might match Tenkawa ayu (sweetfish) with a local Nara sake, chosen for its clarity and colour. In winter, a full-bodied red meets duck and truffle.
LA TRACE has held one Michelin star since 2022, and has been listed in the Gault & Millau guide since 2023. The recognition reflects the restaurant's quiet, precise approach: six counter seats and two tables for four, serving a maximum of eight guests per day. Nara cypress wood is used throughout the interior, and the atmosphere is calm, unhurried.
This is French cooking that starts with the grower, passes through the chef's sensibility, and arrives at the table as something you could only find here.
