The story
In a residential street near Gakuen-mae Station in Nara-shi, Oryori Hanagaki operates as a reservation-only Japanese restaurant. For over three decades, it has served just one party per lunch and one per dinner, a deliberate pace that allows the kitchen to focus entirely on each guest.
The restaurant’s philosophy is rooted in warishu hōjū — the principle that cutting and preparing raw ingredients takes precedence over cooking. This makes the quality of the ingredients paramount. The chef selects only the day’s best from the market, relying on relationships with trusted producers who set aside their finest items for the restaurant. The result is a seasonal omakase course built around produce that changes with the weather and the harvest.
The dashi, the foundation of the cuisine, is a signature. It blends four types of premium natural kombu and uses only the core of dried bonito flakes, shaved from four separate blocks to eliminate any variation in flavor.
The dining experience is intimate, with just ten seats in the house. The tableware and furniture are carefully chosen antiques and art objects, from Edo- and Taisho-era lacquerware to works by artists like Rosanjin and antique Baccarat crystal. The owner holds a license to deal in art, and these pieces — some of which have passed through many hands over centuries — are part of the meal’s quiet beauty.
The omakase menu is offered in two forms: a standard course at 33,000 yen (including tax and service charge) and three tiers of special courses ranging from 44,000 yen to 110,000 yen. The special courses can be tailored to request specific seasonal delicacies such as snow crab, matsutake mushrooms, or tiger pufferfish, and are designed for celebrations or business entertaining.
This dedication to ingredient-driven, uncompromising Japanese cuisine has earned Oryori Hanagaki a Michelin two-star rating every year since the guide first included Nara in 2012. It is a place where the meal is the event, and the setting is as considered as the food.
