The story
Just a minute’s walk from Shin-Omiya Station, Shikinosushi KROUTO is a ten-seat counter restaurant that calls itself an adult hideaway. The setting is intimate and focused: counter dining only, with the chef working directly in front of each guest. The restaurant earned a Michelin Recommended distinction in 2026, a recognition that aligns with its meticulous approach to Japanese cuisine.
At Shikinosushi KROUTO, the ingredient philosophy is clear: only naturally caught (wild) seafood is used. The chef selects seasonal fish and shellfish, then prepares each piece with care—shaping the sushi delicately so that the natural flavor of the neta comes through. Temperature is carefully managed, both for the fish and the shari (vinegared rice), to ensure every bite is at its best.
The restaurant offers an omakase course, currently priced between 16,000 and 22,000 yen (tax included). The menu changes with the seasons, reflecting what is freshest at the time.
To guarantee the quality of the wild ingredients, reservations must be made at least three days in advance. The restaurant does not accept cancellations; a fee of 10,000 yen applies if a reservation is canceled. Dinner service runs from 18:00 to 22:30, with last food orders at 20:30. The counter seats just ten guests, making each evening a private, unhurried affair.
For visitors to Nara seeking pure, unadorned sushi from a chef who lets the ingredients speak, Shikinosushi KROUTO delivers exactly that.
