He returned home in 2011 to reopen his family’s former establishment as a dedicated table d’hôte. The Italian kitchen relies heavily on fresh Niigata harvests paired with imported staples. Miyoshi applies traditional dough folding and rolling methods to craft every batch of handmade pasta on site. Guests navigate a rotating menu through two structured dinner courses that highlight regional vegetables, seafood, and house-cured meats. An August 2024 renovation expanded the service area, allowing the team to streamline plating while preserving the original focus on ingredient integrity.
Dining takes place beneath the branches of a mature zelkova tree near the base of the Doppeuri-zaka slope. The interior reflects the recent overhaul with clean lines and a quiet layout designed for unhurried conversation. Nagisa Miyoshi oversees the beverage service as a certified sommelier, adjusting the wine list to match each season’s offerings.
