Menus evolve throughout the year, shifting components to match local harvests and the chef's current creative directions.
The menu combines French technique with Hokkaido and Niigata ingredients to create plates rooted in local terroir. Preparations include Ezo deer accompanied by truffle and walnut, as well as squab served with beets and chicory. The kitchen also works with botan shrimp and clams, Asahi pork finished with fig salad, and mushroom starters dressed with prosciutto and Gruyère cheese.
The dining area features a Japanese-modern design that frames the meal within a calm, structured environment. Capacity limits seating to two counter sections and one table, each group holding up to four guests. This arrangement keeps the room quiet and allows diners to observe the workflow near the kitchen.
