The story
Hozan is a Japanese restaurant in Osaka's Uehommachi district, a fish specialty restaurant that follows the seasons closely. It has earned a Michelin Recommended distinction for 2026, a mark of its disciplined, subtle approach to Japanese seafood cookery.
The restaurant's guiding principle is "温冷華朴" (onreikahou): serve hot dishes hot, cold dishes cold, and present beautiful food without unnecessary decoration. The chef uses both live fish and aged fish, applying five traditional techniques—cutting, grilling, simmering, frying, and steaming. Each dish is designed to let the ingredient's natural flavor shine, with no excess.
Hozan seats just 14 guests at a counter, creating an intimate, focused atmosphere. The interior combines warm wood tones with a quiet, serene elegance. Two courses are offered: a lunch course and a more elaborate omakase course. Both feature seasonal fish and vegetables, and each ends with clay pot rice cooked over a wood-fired stove—a simple, comforting finish.
