The story
In central Osaka, chef-owner Akihiro Hamaguchi runs Macauda, an Italian restaurant that draws deeply on the cooking of Southern Italy – particularly the regions of Puglia and Sicily where he spent formative time. The kitchen’s focus is on handmade pasta, much of it unique to this address, and on fresh seafood sourced from across Japan.
The dining room offers counter seating, private rooms, and air conditioning, making it comfortable for both lunch and dinner. The lunch menu is straightforward and well-priced: a pasta-and-salad set, a version with house-made pasta, or a full course of two antipasti, two handmade pasta dishes, a main, dessert, and coffee. Dinner expands into a broader selection of antipasti, pasta, and mains.
Among the antipasti are a tuna tartare in the style of Trapani, panelle with capocollo, and Catania-style sausages. The pasta list changes but often includes cavatelli with burnt wheat and anchovy breadcrumbs, casarecce alla Norma, and paccheri with yellowfin tuna from Wakayama and dried tomatoes. Mains like marinated mackerel meunière with a Palermo-style caponata, and lamb cotoletta wrapped in taralli, show the kitchen’s confidence with both land and sea.
Macauda holds a Michelin Bib Gourmand for 2026, an award recognising good quality, good value cooking. The recognition fits a restaurant that delivers focused Italian cooking without pretension, in a city that rewards precision.
