Just steps from the Umeda Sky Building, Naniwakappo NOBORU offers a refined yet relaxed take on Japanese kaiseki. The restaurant is tucked away from the city’s bustle, with a discreet entrance that leads to a warm, wood-toned interior. Here, the focus is on the craft of dashi – the foundational broth that underpins much of Japanese cooking.

The Art of Dashi

The kitchen places exceptional importance on dashi. They use natural true kombu from the Dōnan region of Hokkaido, paired with carefully selected bonito flakes. The water is soft, chosen for its smooth texture. Depending on the dish, the chef adjusts the ratio of kombu to bonito and even the cut of bonito – using the back for clear flavors and the bloodline for deeper body in simmered dishes. The result is a broth that is both gentle and layered.

A signature item born from this approach is the house-made kombu soy sauce, a favorite since the restaurant opened. It is less salty than standard soy sauce, allowing the natural sweetness of the kombu to shine and enhancing sashimi and other dishes without overpowering them.

Counter Dining and Private Rooms

For a front-row view of the kitchen’s work, the counter seats are the best choice. Guests can watch the chef prepare each course, smell the aromas, and hear the sounds of cooking. The chef also offers recommendations on sake and wine pairings.

Upstairs, two private rooms accommodate up to six guests each. These rooms are designed to be soundproof, making them ideal for business entertaining, family gatherings, or any occasion where privacy matters. The course menu can be tailored to dietary needs and preferences, as long as guests avoid seafood entirely.
