Rooted in Tradition

At Oryori Nonohara in Osaka’s Fukushima district, the kitchen’s guiding principle is unwavering respect for Japanese culinary tradition. Each day, a single omakase course is prepared, using seasonal ingredients chosen from across Japan to express the subtle shifts of the four seasons. The chef’s dedication to depth of flavor is most evident in the dashi, made from hand-shaved katsuobushi from Makurazaki. This stock elevates the soup course (wanmono) to a central role, delivering a clear, profound taste that lingers. This meticulous approach earned Oryori Nonohara a Michelin recommendation in 2026.

The Chef’s Journey

The chef-owner’s path to opening his own restaurant was circuitous. After an early interest in Chinese cuisine led him to study in Shanghai, he returned to Japan and trained in Kyoto at Sakurada, then joined the opening team of Kimoto. A stint at a counter kaiseki in Tokyo followed, before he returned to Osaka to become head chef at Sumibi Kaiseki Ishii. In 2025, he took over that same space to open Oryori Nonohara, bringing together everything he had learned.

The Setting

Passing through the noren curtain and a short approach, guests enter a refined space with carefully chosen furnishings. The heart of the room is a nine-seat counter of polished hinoki wood, where the cooking unfolds in full view. This counter is the prime spot, suitable for business entertaining or a special date. A private room with six seats is available for family celebrations – a baby’s first meal, a 60th birthday – and the restaurant can be reserved for parties of seven to fifteen. The atmosphere is serene, allowing the food to speak for itself.
