The story
On the fourth floor of a building in Osaka's Nishitemma district, Oryori Yamada is a calm, deliberate presence. Chef-owner Akihiro Yamada, who trained in the nearby Kitashinchi area before moving his restaurant here in 2024, runs the kitchen with a philosophy rooted in patience and respect for ingredients. The restaurant has earned a Michelin star, a recognition it has held since 2022, for its precise Japanese kaiseki.
The space itself is intimate: nine seats at a hinoki counter and a private room for six. The atmosphere is quiet and focused, designed for conversation and the unhurried enjoyment of a meal. The restaurant is reservation-only and operates in two evening seatings, with lunch available for groups of four or more.
Yamada’s cooking begins with sourcing. He selects ingredients from across Japan, handling each one personally. The dashi, made with natural kombu and bonito, is adjusted daily according to humidity and temperature. Rice is cooked in a kumogama (cloud kiln) that Yamada settled on after years of testing. The tableware is largely antique, sourced from vintage dealers – pieces that, if broken, can never be replaced.
The menu is a single omakase course, changing monthly to reflect the season. A past example included a starter of Matsuba crab with Kyoto kikuna and sesame tofu, followed by a clear soup with wild sea bass and Takenoko bamboo shoots, and a charcoal-grilled tachiuo (beltfish). The meal often concludes with a choice of rice dishes, such as Okayama桃太郎 rice with a soft-cooked egg yolk in soy marinade, or a bamboo shoot rice. The drink selection is extensive and unlisted: Yamada asks guests their preferences and suggests pairings from a cellar of sake, shochu, wine, and Champagne.
The kitchen adds a subtle "twist" to traditional washoku, aiming not just for good flavor but for a moment where the ingredient itself feels fully expressed. It is a quiet, confident style of Japanese cooking that has made Oryori Yamada a destination for those seeking a meticulous, seasonal meal in Osaka.
