The team here works with the seasons, letting each ingredient speak for itself while weaving in subtle influences from beyond Italy's borders.
The kitchen builds its menus around what is freshest. A recent May dinner course opened with fresh osetra caviar, aji (horse mackerel) with okra and rhubarb, and a touch of smoked butter. It moved through conger eel with basil, sweetfish with zucchini and sansho pepper risotto, lamb with young corn and coconut milk, handmade tagliatelle with pork and eggplant, and finished with Hokkaido venison, white asparagus, and a dessert of melon with gyokuro tea. A shorter, seven-course dinner option is also available, offering the same precision at a more accessible price.
The restaurant seats just twelve, with counter dining that puts the kitchen's work on display. A skilled sommelier is on hand to pair wines with each course, drawing from a carefully selected list to complement the changing flavours.
PRESTAU's philosophy is simple: let the ingredients lead. The team sources daily from trusted producers and markets, crafting dishes that feel both grounded and inventive. The atmosphere is described as one where guests can enjoy a meal the way they might listen to music or look at art – with an open mind and a sense of discovery.
Open for lunch and dinner, closed Mondays. Private parties can be arranged for both services.
