The story
Shitennoji Hayauchi is a soba specialist in Osaka’s Tennoji ward, steps from the historic Shitennoji Temple. The restaurant’s name — “Hayauchi” — reflects the craft at its heart: soba noodles made by hand, from scratch, every day.
The owner, Hayauci, spent years researching and refining the process. Today, the kitchen works only with buckwheat flour from carefully selected farms, grinding, kneading, and cutting each batch with precision. The result is soba with depth and fragrance — noodles that carry the flavour of the grain itself. This dedication earned the restaurant a Michelin Bib Gourmand, a recognition of good quality, good value cooking.
The menu offers both cold and hot soba. Cold options include seiro (served on a bamboo mat), available as a fine-ground version or the more rustic arahiki inaka. The kamo jiru seiro pairs the noodles with a rich duck broth, while tempura seiro adds seasonal vegetables and shrimp. For a warm bowl, there is kake soba, tororo soba with grated yam, and nishin soba topped with simmered herring.
Seasonal soba appears throughout the year, using vegetables at their peak. A selection of small dishes — soba gaki (buckwheat dumplings), jako oroshi with spicy radish, and homemade tofu — rounds out the meal. The restaurant also offers a range of sake and shochu, including a soba shochu.
Shitennoji Hayauchi runs soba-making classes where guests can learn the full process: mixing water with buckwheat flour in a wooden bowl, kneading the dough, rolling it out with a long pin, and cutting the sheets into noodles. Participants take home their handmade soba, along with the restaurant’s special dipping broth. The classes are held in small groups and are open to visitors from abroad, with an English guidebook available.
