Shuko Osaka Manpukudou occupies a converted folk house in the Imazato district, a neighborhood that still feels like old Osaka. Inside, a counter of six seats and a few tables create a quiet, intimate setting. The atmosphere is warm and unhurried, the kind of place where you immediately feel at ease.

The Man Behind the Course

Chef Tetsuo Ashida began his career in a Chinese kitchen before shifting to Japanese cuisine, driven by a passion for sake. He opened Manpukudou in 2003. His cooking is guided by two principles: “proper cooking” and “letting the ingredient speak.” Each month, he designs a new omakase course around the best available produce, sourced from trusted suppliers. The goal is not to surprise for the sake of it, but to draw out the natural texture and fragrance of each ingredient. A plate of lotus root, for example, is carefully strained to remove fibers so that its shape and flavour arrive clearly on the palate.

Sake Pairing by Taste, Not Theory

Pairing is central here. Every month, after the course is set, the team tastes through more than fifty bottles of sake. Only the ones that genuinely lift the food make it onto the pairing menu. The result is a selection that feels personal and precise, often introducing guests to sake they have not encountered before.

Recognised for Consistency

The restaurant’s steady, thoughtful approach has earned it a place in the Michelin Guide – a Bib Gourmand award for several consecutive years, and a Recommended designation in the 2026 edition. For a small, chef-driven restaurant in a quiet corner of Osaka, that recognition speaks to an unwavering commitment to the craft of Japanese cuisine.
