Tonkatsu KATSU Hana in Osaka’s Sakaisuji-Honmachi area exists to change how people think about fried pork. The chef-owner himself once avoided tonkatsu, put off by the heavy, greasy memory of childhood. That changed when he tasted a truly masterful version. At KATSU Hana, he and his wife work to create tonkatsu that is light, clean, and so easy to eat that even those who usually skip fried food come back for more. Their approach earned the restaurant a Michelin Bib Gourmand in 2026, a nod to both quality and value.

Craft in Every Step

The kitchen’s obsession begins with the oil – a proprietary blend changed frequently for freshness – paired with custom-made breadcrumbs that yield a crisp, golden crust without excess grease. After frying, the cutlets are rested, allowing residual heat to finish cooking and the juices to settle, resulting in a tender, never-overcooked bite.

The real star is the pork. KATSU Hana rotates through five to nine varieties of premium domestic pork at any time, having sourced over 30 different breeds. Choices might include the mellow, sweet "Kinako-butа" from Miyazaki, the clean-tasting "Egoma-butа" fed on perilla seeds, or the deeply marbled "Kinton-ō" from Shizuoka. Guests can order loin or fillet in various weights, and the menu changes with what’s best that day.

Thoughtful Details

The meal extends beyond the meat. Shredded cabbage comes with a house-made dressing of onions aged over a week and plenty of perilla leaf – bright yet rich. A carrot dressing is also available. Rice is Fukui Prefecture Koshihikari, known for its fragrance and bite, and refills are free. The recommended way to eat is first plain to taste the pork’s natural sweetness, then with two types of salt (rock and seaweed), and finally with one of the two original sauces.
