Artisan partnerships and ingredients

Uozen builds each dish around a network of regional makers who supply butter, salt, miso, and spring water. Guernsey cattle from Kasemaiyu provide beef and milk, while mountain vegetables and fungi arrive directly from local foragers. Titanium pans forged by SUS Gallery conduct heat evenly across the stove. These collaborations keep the Japanese concept of Itadakimasu visible in every bite.

The dining experience

Guests receive a single chef-selected course priced at eighteen thousand yen. The service unfolds over roughly two and a half hours, allowing the kitchen to pace each preparation carefully.
