Le Musée in Sapporo anchors a quietly experimental vegetarian cuisine born from years of cross-cultural study. Chef Makoto Ishii traveled through France, Italy, and Spain beginning in 1995 before establishing his own venue in 2005. He reimagined the space in 2020 to function as a shared studio for painting, ceramics, and culinary work. Ishii frames the operation as a creative vessel rather than a conventional dining establishment.

Canvas of the Seasons

Every plate maps the shifting light and texture of Hokkaido. The kitchen captures morning dew, heavy frost, thawing ice, and autumn canopy through precise ingredient selection. Local vegetables, wild greens, and regional seafood move through the pass according to natural availability. This grounded methodology recently earned the venue three radishes in the We’re Smart Green Guide.

Structured Tasting Pathways

Diners choose between two clearly defined routes through the menu. The Concept C offering operates exclusively at midday and maintains a straightforward fixed price. The Idea course spans both lunch and evening sessions, with evening seating beginning shortly after six thirty. A dedicated vegetarian approach ensures the seasonal narrative remains the primary focus.
