The story
nikap brings careful Italian cooking to Ebetsu under the direction of chef Yuya Niida. Born in Hokkaido’s Nikappa district, he named the space after an Ainu term for elm bark, honoring a regional craft of weaving durable textiles. After four and a half years at RISTORANTE TERZINA, Niida traveled to Italy to study regional techniques across Piedmont and Emilia-Romagna. He later spent seven years refining his approach at teatro di massa before establishing this quiet dining room in late 2023.
Evening guests select from three omakase tiers ranging from six to eight plates, with ingredients shifting according to daily harvests and supplier availability. The Gault&Millau recognition highlights how Niida balances rustic Italian traditions with precise plating and disciplined pacing. A standard progression features an appetizer, house bread, a pasta course, and a plated main before dessert and coffee. Every course maintains a steady volume so conversation flows without interruption between the kitchen counter and the table.
