The story
Ristorante Canofilo serves its Sapporo guests through an ever changing Italian kitchen where the chef builds each plate from the morning market selection. There is no printed menu because the team prepares an omakase sequence that shifts with every service. Guests can choose from tiered Pranzo lunches or deeper dinner formats labeled Menu A through C. Any dietary restrictions or preferred ingredients should be noted before sitting down.
Satoshi Ogawa joined the establishment when it opened in 2002 and assumed the chef role shortly after relocating from Shin-Nai Town. He refined his craft until the venue changed its name in 2017, earning a fifteen point rating from Gault&Millau for the upcoming guide. Ogawa treats cooking like a musical arrangement and composes each service around whatever ingredients arrive at the door.
The dining room functions as a quiet hideaway where calm interiors support the Italian cooking with unhurried conversation between courses. Visitors can book the main floor for general seating or reserve a private room that accommodates ten guests for meetings or celebrations. Staff also prepare projectors and screens for groups requiring visual aids during their gathering. The restaurant maintains a focused service rhythm that leaves ample time for guests to linger.
