The kitchen selects each fish by weighing conditions between Toyosu market suppliers and Hokkaido regional catches. Master Oda orders specially cultivated large grain Yumepirika rice from Tsukigata Farm to build the vinegared base. He recalibrates the moisture content and seasoning blend throughout the year to match shifting produce cycles. This deliberate pacing meets high Japanese culinary standards without unnecessary embellishment.

Grounded techniques in northern climates

Traditional Edo mae methodology guides the preparation, while the final cuts adapt to the northern environment. Guests sit along a compact wooden counter where hands shape each roll using long practiced pressing motions.
