The chef and the kitchen

SINQ in Shizuoka approaches French cooking through a disciplined study of fire and time. Owner chef Shingo Hozaki founded the restaurant after years of training across European kitchens and bartending bars, yet his original inspiration remains simple. A childhood memory of his grandfather roasting mochi over an irori hearth defined his standard for heat management. He now applies that same focus to controlled fermentation and prolonged aging, treating every ingredient as a puzzle to solve rather than a commodity to serve.

Seasonal plates and precision

The menu shifts with Shizuoka’s agricultural calendar, highlighting regional proteins alongside precise preservation methods. A thirty-day aged mackerel arrives with fermented sorrel, while black koji cured goat belly wraps locally harvested macrocalamus shoots. Charcoal grilling defines the backbone of each course, whether binchotan heats wild deer loin or direct flame crisps sweetfish skin. These modern French preparations merge with Japanese terroir to create layered textures that develop slowly on the palate. The kitchen also highlights valley catches like goldeneye snapper wrapped in paulownia leaves with house-made peanut miso.

Seating and pairings

Reservations remain strictly necessary because the space accommodates only a handful of guests each evening. The two-hour dinner service moves at a measured pace, allowing each of the twelve courses to settle before the next arrives. A dedicated tea curator and wine selection complement the food without overpowering it, focusing on balance rather than volume. This restrained setup earned the venue a fifteen point rating from Gault & Millau, reflecting consistency over spectacle.
