Quietly tucked away on the third floor of a building in Akasaka, Akanezaka Onuma offers a retreat from the city's pace. The approach is deliberately understated—a few minutes' walk from Akasaka Station leads to a discreet entrance that hints at the focused, intimate dining experience within.

The kitchen follows the rhythm of the Japanese calendar, crafting kaiseki that centers on the pure expression of seasonal ingredients. Seafood arrives from Toyosu, wild mountain vegetables come from Yamagata, and the signature Tsuyahime rice is cooked in a clay pot to release its full fragrance. Each course in the monthly-changing BOTAN set is built around a rich, clear dashi and the chef’s refined technique.

The interior is all counter dining—just eight seats—placed so that every guest can watch the precise, unhurried movements of the chefs as they prepare each dish. It is a calm, focused space, smart-casual in dress code but serious in its dedication to the craft.
