From the 49th floor of Toranomon Hills Station Tower, apothéose presents a distinctly personal vision of French haute cuisine. The restaurant’s approach, described as “La Nouvelle cuisine gastronomique de Terroir,” marries classical French technique with the bounty of Japan’s regions. Chef Keita Kitamura travels from north to south, visiting producers to source seasonal ingredients at their peak. The result is a menu that feels both rooted in tradition and alive to the moment.

The Menu Experience

There is no à la carte; apothéose offers three fixed tasting courses. The Course Dinner Menu (¥33,000) is the signature expression of the season. The Menu éphémère (¥24,000) offers a slightly shorter journey. And the Menu nuit étoilée (¥64,000) is the full, star-lit experience — a succession of dishes that builds toward a crescendo. Each plate is conceived from the vivid flavors of seasonal produce, the chef’s creativity sparked by what the land and sea provide. The wine list is curated to match, and a 12% service charge applies.

Beyond Michelin, Chef Kitamura was awarded Two Knives at The Best Chef Awards 2025 and received the “Tomorrow’s Grand Chef” prize from Gault&Millau 2025. The dining room is intimate and modern, a fine dining setting with air conditioning, wheelchair access, and space for private parties. Service begins at 6pm, with last orders at 10:30pm; the restaurant is closed Sundays and Mondays.
