The story
Chef Bruno Hiruma, born in 1990 in Mallorca and raised in Barcelona, brings a dual cultural background to his cooking. After moving to Japan in 2010, he spent five formative years in Hokkaido, absorbing the island's deep appreciation for seasonal ingredients. This respect for Japan's four distinct seasons became the foundation of his culinary philosophy. Today, he personally travels across the country to meet producers, building relationships that allow him to honour each ingredient's essence while weaving in the elegance of Armani's design ethos. His dishes are defined by a quiet, refined elegance and an honest dialogue with the produce.
ARMANI / RISTORANTE’s signature initiative, "47 Roots," is a journey through all 47 prefectures of Japan. Chef Hiruma visits each region to meet farmers, fishermen and artisans, translating their stories and traditions into a tasting course. The current menu features ingredients from Nagano Prefecture—vegetables nurtured in the highland air, local soba noodles, and the deep flavours of mountain bounty—expressed through an Italian sensibility. This project is not a gimmick; it is a deliberate effort to preserve and transmit the wisdom and practices of Japanese producers to the next generation, one plate at a time.
Located on the 10th and 11th floors of the Armani Ginza Tower, a 56-metre landmark in Tokyo's premier shopping district, the restaurant offers a setting that is both polished and calm. The interior reflects the clean, tailored lines of the house, with service that matches the understated luxury of the surroundings. Beyond the main dining room, the bar invites guests to begin or end the evening with a thoughtfully curated drink.
The precision and depth of the experience have earned ARMANI / RISTORANTE a place in the Michelin Guide Tokyo 2026, selected as a "Selected Restaurant." On June 17, 2026, the restaurant will host a one-night-only 4-Hands Dinner with chef Ryuichi Nishimoto of Karuizawa's restaurant MANO. The two chefs will collaborate on a special menu, also focused on Nagano ingredients, with a pairing course priced at 45,000 yen per person.
