In Tokyo's historic Asakusa district, Asakusa Hirayama is a soba kaiseki restaurant where chef-owner Shu Hirayama brings a philosophy of aroma and craftsmanship to every dish. The restaurant has earned a Bib Gourmand from Michelin for its good quality, good value cooking, a fitting recognition for the care that goes into each bowl and plate.

Hirayama's path to opening his own restaurant was shaped by time spent training at two respected Tokyo kitchens: Ryōgoku Hosokawa and Ginza Kojū. There, he deepened his understanding of both soba and Japanese cuisine, developing a reverence for fragrance and handwork. Before that, a soba-making encounter in New York first drew him into the craft, and he has been refining his approach ever since.

Stone-Ground Soba and Seasonal Dishes

The heart of the menu is jūwari soba—100 percent buckwheat noodles made from flour ground in-house on a stone mill. This technique preserves the grain's aroma, and the noodles are served alongside a changing selection of seasonal appetizers. The space itself reflects this sensibility: warm walnut wood and a modern take on traditional design create a calm, welcoming atmosphere.

Hirayama visits producers to understand their ingredients, and that connection to source shows in the cooking. The result is a meal where soba, small dishes, and sake come together in a quiet, deliberate rhythm.
