On the tenth floor of the Chanel Ginza Building, BEIGE Alain Ducasse brings the culinary philosophy of one of France’s most celebrated chefs to the heart of Tokyo. The restaurant holds a Michelin one star, a recognition of its consistently high-quality cooking that fuses Ducasse’s vegetable-focused, jus-based approach with the meticulous spirit of Japanese hospitality.
The kitchen is led by Chef Takahiro Noguchi, who trained in France and spent years refining his craft at Ducasse-affiliated restaurants. He took the helm in April 2026, continuing the house philosophy of letting vegetables and carefully built juices take centre stage. Alongside him, Pastry Chef Kenjiro Katada brings a decorated resume: he won the prestigious “Under 29” competition for young pastry chefs in 2018 and placed third in the Paris finals of the Club Galette des Rois. General Manager Shujiro Kono, a former competitor in the Coupe Georges Baptiste service contest, oversees the dining room with quiet authority.
Lunch and dinner unfold through a series of set menus. The Signature course (¥35,000) is the chef’s omakase-style selection, beginning with an amuse and moving through four dishes before dessert. Shorter options like the Lunch Déjeuner (¥14,000) offer a concise introduction, while the Menu Carte at dinner allows for a fish and meat progression. The wine list is deep, with an emphasis on Champagne and Burgundy, alongside selected Japanese sakes.
Inside, the space reflects the understated luxury of its Chanel address – clean lines, soft textures, and a view over Ginza’s rooftops. Private rooms are available, and the restaurant is wheelchair accessible. The atmosphere is formal yet welcoming, the service precise without being stiff.
