In a quiet corner of Minamiazabu, on the ninth floor of a building that blends into the Tokyo skyline, Chiso Takayama offers a version of Japanese cuisine that is direct, seasonal, and deeply respectful of its ingredients. Chef Tomoya Takayama, the owner, describes his cooking as honest — a word that runs through every aspect of the experience.

The restaurant seats only ten guests, with six at the counter and a private room for two to four. The counter is where the action happens. Here, Chef Takayama finishes each dish in front of you, a practice that turns dinner into a quiet conversation between cook and guest. The atmosphere is calm, removed from the city below, and the service is precise without being stiff.

The menu changes with the seasons. Chef Takayama sources ingredients directly from producers across Japan, letting the natural flavours of the food speak. The dashi, a cornerstone of the kitchen, is made with water from the famed "Uriwari no Taki" spring in Fukui Prefecture, combined with kombu and freshly shaved dried bonito flakes. The result is a broth that is aromatic and deeply savoury, used as the foundation for many dishes.

Lunch and dinner are served as omakase courses. The evening menu offers a choice of eight or ten courses, while lunch is a six-course affair. A typical dinner might start with an appetiser, move through a clear soup, sashimi, grilled and simmered dishes, and end with a seasonal dessert. The menu changes with what is available — in winter, expect matsuba crab and fugu. The kitchen also prepares a separate crab course when the season is right.

The wine list is curated to complement the food, and the restaurant accepts corkage for wine at a fee. Chiso Takayama holds a Michelin Recommended distinction, a recognition that aligns with the kitchen's steady, ingredient-driven approach to Japanese cuisine.
