What sets it apart is a near-total avoidance of commercial umami seasonings, hydrolyzed vegetable protein, yeast extracts, and processed foods. Instead, the kitchen builds flavor from natural ingredients and handmade condiments, aiming for a clean, lingering aftertaste. The result is a lighter, more nuanced expression of Chinese cooking that earned the restaurant a Michelin Recommended distinction for 2026.

KAKYU-BOU offers several set courses. The signature Ka Course (9 dishes, ¥18,000) begins with a colorful assortment of appetizers, followed by soup, stir-fry, fish, meat, noodles or rice, and dessert, paired with Dong Ding oolong tea. For those seeking a lighter option, the Light Course (5 dishes, ¥9,950) includes the popular appetizer platter, soup, fish, meat, and noodles or rice. Two shark fin courses are also available: a full 9-dish course (¥30,000) featuring a whole simmered fin from Kesennuma, and a shorter 5-dish version (¥21,000) for those who want to focus on the fin alone. All courses emphasize seasonal ingredients and the restaurant’s signature lightness.
