The story

Chukasoba Ginza Hachigou: Gold Broth Ramen in Tokyo | Michelin Bib Gourmand

A Broth Without Kaeshi

At Chukasoba Ginza Hachigou, the signature golden soup is built without the traditional seasoned soy sauce base (kaeshi). Instead, a deep umami emerges from duck and chicken stock, layered with scallops and shiitake mushrooms. A finishing touch of prosciutto lends a gentle saltiness and richness, creating an elegant, clear broth that fills the bowl. This refined approach to ramen earned the restaurant a Michelin Bib Gourmand in 2026, recognizing good quality, good value cooking.

Noodles from a Legendary Milling House

The thin noodles are custom-made by Asakusa Kaikaro, a respected Tokyo mill with over a century of history. Developed under the guidance of chef Fushicho Karasu, the strands are managed without rounding during production to keep them straight and clean. The result is a pasta-like firmness and clean bite that holds the golden soup without clouding it, ensuring every sip remains pristine.

A Setting for All Senses

The space recalls a kaiseki restaurant: warm wood, a carefully measured counter, and soft lighting. Classical music plays in the background, inviting guests to slow down. Whether dining at lunch or dinner, the counter seating offers a front-row view of the kitchen’s precise work. The restaurant also accommodates private parties and offers takeaway for those who wish to enjoy the broth at home.

Menu Highlights

  • Chukasoba (1,200 yen) – the purest expression of the golden broth and fine noodles.
  • Special Chukasoba (1,600 yen) – topped with a seasoned egg and char siu.
  • Limited Ravioli Gourmandises Chukasoba (2,200 yen, 30 bowls per day) – a luxurious variation.
  • Meat Rice Bowl (500 yen) – loaded with chunky char siu, finished with pepper caviar and a splash of soup, paired with fresh horseradish for a clean finale.

Each bowl reflects the kitchen’s dedication to letting ingredients speak for themselves, elevating ramen into an experience that feels both refined and deeply satisfying.
