The restaurant’s name – meaning “courage” in French – reflects the conviction of chef Furuya Seira, who took the helm in 2020 and has since shaped a kitchen where French technique meets the finest Japanese produce.

In 2022, Gault&Millau awarded him the “Young Chef of the Year” prize. The Michelin guide has since recognized Courage as Recommended, placing it among Tokyo’s noteworthy dining destinations.
