A Philosophy of Balance

At Florilège, the guiding idea is “To Balance A with B.” Chef Hiroyasu Kawate expresses his vision through vegetables, transforming everyday ingredients into unexpected flavours. The plant-based course reduces the weight of meat, fish and dairy, offering a sustainable direction that does not sacrifice depth or pleasure. This is French cooking that trusts the produce itself.

The Table d’Hôte

The restaurant’s heart is a 13-metre communal table. Chef Kawate long dreamed of a space where guests, staff and the kitchen share one long surface, breaking the distance between those who cook and those who eat. The atmosphere is that of being invited to a private residence in the city – conversation flows, wine is poured, and the meal becomes a shared event. It is a deliberately informal elegance.

Chef Hiroyasu Kawate

Born in Tokyo in 1978 to a family of cooks, Kawate never considered another path. He trained at Le Bourguignon in Nishiazabu, Jardin des Sens in Montpellier, and Quintessence in Shirokane before opening Florilège in Minami-Aoyama in 2009. The restaurant moved to Jingumae in 2015 and, in July 2023, relocated to its current home in Azabudai Hills. Kawate has spoken at world gastronomy forums in Turkey and Iwate, and his restaurant has been consistently recognised by both Michelin and The World’s 50 Best Restaurants.

Recognition, Not Decoration

The MICHELIN Guide Tokyo 2026 awarded Florilège two stars – a distinction it first earned in 2018 and has held since. The World’s 50 Best Restaurants ranks it 36th in the world (2025), and Asia’s 50 Best places it 31st (2026). These acknowledgements reflect a kitchen that balances creativity, sustainability and precise technique without losing sight of the guest at the table.
