The story
For over two decades, Forchetta has carved a singular path in Taiwan’s fine-dining landscape. Now located in Taichung’s Qiyi district, the restaurant has earned a Michelin star for five consecutive years, a testament to its unwavering commitment to showcasing the island’s bounty through a European Contemporary lens.
The story behind the stove is as compelling as the food. Chef Max, a former veterinarian who later studied landscape design, entered the culinary world as a self-taught outsider. His restless curiosity and dedication to learning led him to develop a style that regulars call “Mediterranean-style Taiwanese cuisine.” He spent 12 years refining his vision at his original Taipei location before moving to Taichung, where he continues to challenge conventions.
Forchetta operates on a no-menu, seasonal format. Chef Max insists that understanding the ingredient is the foundation of all great cooking. His kitchen sources from the length and breadth of Taiwan: wild-caught mantis shrimp from Turtle Island, fresh squid from the Northeast coast, plump oysters from Penghu, and organic produce from Yunlin. The result is a tasting menu that changes with the market, never repeating itself.
Standout dishes from the current repertoire include a golden consommé, clarified and rich, made from rice-field duck and over a dozen vegetables simmered for three days. The duck gizzard that accompanies it is confit for 12 to 15 hours until meltingly tender. Another signature is a play on the classic Taiwanese snack “century egg and tofu,” using organic tofu from Dali and lead-free century eggs, finished with a molecular gastronomy touch of aged balsamic vinegar.
The space itself is intimate and welcoming, with a private room and an outdoor garden area that seats up to 14 guests. A well-curated wine cellar and a dedicated sommelier ensure that each course finds its perfect match. Forchetta also offers a unique tea pairing: the world-champion Hongcha from Taiwan’s high-altitude Lishan tea region, cold-brewed to bring out notes of tropical fruit and apricot, is a house exclusive.
Whether it is the arrival of white truffles in autumn or the first harvest of local asparagus, Chef Max’s creativity turns each season into a reason to return. Forchetta is not just a meal; it is a conversation between the land and the plate.
